Having grown up in Italy and being half Italian, I adore bruschetta! Which, by the way, it’s pronounced broo-skett-ah
Any time I’m in a rush and craving a good filling snack - Bruschetta is my my fastest, most delicious option. You’ve got your good complex carbs from the rye bread, your good source of fat from the (ITALIAN!) olive oil (copious amounts necessary) and your veg from your tomatoes. Or fruit if that’s what you choose to categorise it as. If feels like more of a vegetable to me 😂
INGREDIENTS
10 cherry tomatoes
a slice of your bread of choice(I love rye bread)
seeds
olive oil
basil
salt & pep
garlic (optional)
METHOD
Toast your bread, chop the tomatoes and squeeze and slide the tomatoes up and down the slice of bread once toasted to make the bread juicier! If using garlic, chop it up and smooth it over the bread too to as a base. Then add chopped tomatoes, you could even add some olives and/or pesto here. Next add your basil leaves, I also love to toast some pumpkin and sunflower seeds and sprinkle them on top for some extra fibre and minerals. Add a little more garlic if using it! I’m not mad on it so I leave it out. To top it all off, season with salt and pepper.
